Vegan Cream of Asparagus Soup: Animal-free can be so delicious

Asparagus soups are certainly one of the most popular dishes that we cook with stalks. So that everyone at the table is full, today you will receive a vegan recipe from us.

Ingredients for 2 servings:

  • 250 g of white asparagus
  • 1 onion
  • 1/2 spoon of vegetable margarine
  • 1/2 teaspoon of flour
  • 250 ml of vegetable soup
  • 100 ml of vegetable cream
  • 1/2 lemon (juice)
  • Salt and pepper

And this is how it is done:

  1. First, cut off the woody tops of the asparagus. Then peel the stems and remove the tops, but keep them. Finely chop the remaining stalks. Peel and dice the onion.
  2. Now put the pot on the stove and sauté the onion in the margarine. Add the flour and fry briefly, pour the soup, mix well and add the pieces of asparagus without the tips to the pot. Cook for 15 minutes on low heat.
  3. Then pour vegetable cream, stir and remove the soup from the stove. Puree, season with lemon juice, salt and pepper and now stir in the asparagus tips. Return to the stove for another 5 minutes. Done!
