Beneficial and delicious Tortellini in Brodo: light Italian cuisine
There are also light delicacies in Italian cuisine that are also a real treat for the soul. The best example: these fantastic tortellini in a boat. A song!
Ingredients for 4 servings:
1 kg of meat soup, beef
2 liters of water
1 bay leaf
1 tablespoon of salt
400 g of tortellini (from the cooling section)
40 minutes (including cooking time)
And this is how it is done:
The first thing to do is prepare the soup. To do this, put the meat for the soup in a large pot and cover it with 2 liters of cold water. Bring everything to a boil, then remove.
Meanwhile, peel and chop the carrot, celery and onion. Wash the leek, remove the ends and cut into rings. Add all the vegetables to the pot along with the herbs and spices. Cover halfway with the lid and simmer on medium heat for two hours.
After that, remove the soup from the stove and let it cool down a bit. Strain the soup into another pot through a sieve lined with a clean tea towel to filter the fat and other ingredients.
Place a pot of clear broth on top and let the tortellini simmer in the broth according to package instructions. If necessary, season it – done!
Advice: Our tortellini in a boat are especially tasty if you sprinkle the soup with freshly grated Parmesan cheese before serving. Simply heavenly!
