Supply Crate Recipe: Chef’s Star Soy and Chicken Fried Rice

Soy chicken with egg fried rice and chili apple sauce

Ingredients for 2 people:

  • 2 chicken drumsticks
  • 1 tablespoon of flour
  • soy sauce
  • sweet chili sauce
  • 1 bunch of spring onions
  • 250 g of jasmine rice
  • 2 eggs
  • 1 apple
  • oil for frying
  • Salt, freshly ground pepper from the mill
  • 1 clove of garlic, roughly chopped
  • 1 onion, roughly chopped
  • 1 handful of fresh coriander leaves
  • 1 tablespoon of chives, finely chopped

Cook the rice in salted water according to the instructions on the package and drain.

Remove the meat with chicken drumsticks, cut into bite-sized pieces and season with salt and pepper. Mix the flour with 2 tablespoons of soy sauce and 1 tablespoon of sweet chili sauce and marinate the pieces of meat in it for about 1 hour. Fry the chicken pieces in a pan in heated oil until they are golden brown on all sides. Remove and keep warm.

In the same pan, fry the rice and push it a little to the edge. Crack the egg into the pan, mix, season with salt, pepper and a little soy sauce. Then throw or mix well the egg and rice. Cut 2 spring onions into small rings and add them at the end.

Chop 1/4 apple into small cubes. Boil 3 tablespoons of soy sauce and 1 tablespoon of sweet chili sauce in a pot. Add the apple pieces and mix well.

Robin uses the freed chicken bones for a suitable soup. To do this, stew the bones with a little spring onion and garlic and – depending on the amount of bones – with 0.5-1 l of water for about 1 hour. Season with a little soy sauce, salt and pepper. Pour the soup through a sieve. Beat the egg and carefully pour in the soup.

to serve:

Put the rice on the plates, place the pieces of chicken on it and finally pour the sauce over it.
