Ingredients for chicken:
Clean the chicken (if possible from breeding suitable for the species) and divide it into pieces. To do this, separate the drumsticks and wings from the body. Cut the legs in half at the joint. Cut the body in half lengthwise. Divide the breast area with the bones again into 3-4 parts. Share the other area as well.
If you don’t want to use ready-made soup, you can perfectly use the part of the body with a little meat to prepare fresh soup. To do this, put the soup vegetables, onions and pieces of chicken in a pot and add some spices and seasonings. Add water until the ingredients are covered. Bring everything to a boil, then reduce the heat and cover the pot. Let the soup cook for at least 1.5 hours.
For chicken with lemon, heat the olive oil in a pot, fry the remaining pieces of chicken on all sides and season with salt and pepper. In the meantime, peel and cut the shallots in half. Also cut the young garlic in half. Alternatively, use 4 cloves of garlic. Peel the ginger and cut it into thin slices. Clean the seeds from the tomatoes, and cut the meat into slices. Wash the lemons well and cut them into quarters.
Sauté the shallots, garlic and ginger, then add the soup. The chicken pieces should be about two-thirds submerged in the liquid. Add lemon and season with chili and a little salt and pepper. Reduce the heat and cover the pot. Simmer the chicken for about 45 minutes. After about 30 minutes, add the tomatoes.
Clean and slice the mushrooms. Heat the olive oil in a pan and sauté the mushrooms in it. Reduce the heat slightly and cook the mushrooms until the end. Add a little salt and sugar in the last few minutes. Add the mushrooms to the chicken just before serving.
Ingredients for carrots:
For a side dish, peel the carrot and cut it into sticks or slices. Cook in slightly salted water for a few minutes. The carrots should still be al dente. Drain and quench with cold water.
Heat clarified butter in a pan and fry carrots on it. Season with a little salt, pepper and sugar.
Place chicken pieces on plates with sauce and mushrooms and serve with carrots. Baguettes, potatoes and other side dishes can be served as desired.
