So easy and so incredibly delicious! Thanks to the many valuable plant substances, the vegan detox soup really starts our metabolism and thus helps to detoxify the body and improve our well-being in the long term.

Ingredients for 4 people:

  • 600 g of broccoli
  • 750 g of Savoy cabbage
  • 2 carrots
  • 4 sticks of celery
  • 4 cloves of garlic
  • 1 onion
  • 2 parsnips
  • 1 teaspoon of olive oil
  • 500 ml vegetable stock, hot
  • 1 lemon, freshly squeezed
  • Basil, 2 stalks
  • Salt

Approximately per serving:

  • 397 calories
  • 9 grams of fat
  • 47 grams of carbohydrates
  • 21 grams of protein

And this is how it is done:


  1. Clean about 100 grams of broccoli florets and set aside. Wash the remaining vegetables and cut them into small pieces.
  2. Heat the oil in a large pot. Add the chopped vegetables and simmer gently for five minutes.
  3. Add hot vegetable broth and lemon juice. Bring to a boil, reduce the heat and cook for about 20 minutes.
  4. Blanch the broccoli florets for two minutes in boiling salted water. Drain and set aside.
  5. Add the basil to the soup and puree everything with an immersion blender. Pour the soup into decorative plates or bowls and arrange with the blanched broccoli and serve. Enjoy your meal!
