Summer melon and mead gazpacho for hot days
Have you ever tried cold melon soup? If you haven’t, then do it today, because there is hardly a greater pleasure in summer.
And this is how it is done:
- Peel the melon. Wash the peppers and remove the seeds. Peel the cucumber and onion. Dice everything, including the bun.
- First puree the fruits and vegetables in a blender, then add the breadcrumbs, onions and other ingredients and chop them as well. Season with salt and pepper and garnish with sprouts and basil. That was it!
Soup in summer? Phew, isn’t that too hot? Not if it’s cold gazpacho. We already know the classic one with cucumber or tomato, but it can also be prepared with fruit. And it can still be a great treat, as our honeydew melon gazpacho shows. It may be sweet, but it’s seasoned with vinegar, citrus juice, salt and pepper, making it the perfect way to satisfy a little midday hunger on a hot day. If you want, you can season everything and spice it up – for example, mix in a little Tabasco or a few chili flakes.
Of course, melon gazpacho is best if you put it back in the refrigerator and cool it to ice temperature before eating. At least it’s warm enough outside! In order not to be boring, other cold soups add enough variety to the menu. For example, there is our cold vegetable soup of cucumber, pepper and carrot.
