Lose weight deliciously: Light lentil soup with carrots
Lentils are not only an absolute superfood, they can also help you lose weight. This light soup is easy to make and super healthy!
And this is how it is done:
- Wash the carrot and cut it into larger pieces. Heat 2 tablespoons of olive oil in a pot, add carrots and lentils and saute briefly. Add vegetable broth and milk and bring to a boil. Cook on low to medium heat for about 15 to 20 minutes.
- Purée the soup with a hand mixer until you reach the desired consistency. Here you can decide for yourself whether you want to enjoy the soup fine or with a few pieces. Season to taste with salt, pepper and chili.
- Serve the soup in four bowls, place a spoonful of yogurt in the middle and sprinkle with fresh parsley. If you want, you can add a toasted slice of your favorite bread for dipping.
Advice: Of course, you can easily prepare this dish vegan. Simply replace milk and yogurt with a plant-based alternative, such as oat or soy. If you’re making a larger batch, this soup also freezes well and thaws as needed.
