Potato soup with beans
Ingredients for 4 people.
40 dag of floury potatoes
1/2 kg of bean pods
1 onion
a few sprigs of marjoram
2 dl of cream for whipping cream
10 days of bacon
1 liter of vegetable soup
butter
nutmeg
Salt
Pepper ad mill
Preparation.
1. Peel, wash and dice the potatoes. Finely chop the onion. Melt 2 tablespoons of butter in a large saucepan. Briefly saute onion and diced potatoes. Pour in the soup and cook for 20 minutes.
2. During this time, cut the beans into very small pieces. Mash the potatoes with a fork. Pour 1 dl of cream. Season with salt, pepper and nutmeg. Let it boil. Add green beans and continue to cook over low heat until the vegetables are al dente.
3. Cut the bacon into very small cubes and fry in a pan without fat until it becomes crispy. Drain on kitchen paper. Tear off the marjoram leaves from the stems. Beat the remaining cream into creamy whipped cream and mix into the marjoram soup just before serving. Serve and sprinkle bacon on top.
