Frankly, there is hardly anything simpler and, in this case, more useful than good old one-pot chicken. It’s not just great that you’re producing little waste. The fact that you don’t have to do anything but cut a little and watch the chicken drumsticks with pumpkin and tamarind sauce become crispy and soft in the oven is also convincing.
This is ultimately pure comfort food for your soul. I also love the broth that forms at the bottom of the casserole dish as it bakes. When you spoon it out, it almost feels like you’re sipping a really hearty chicken soup. My advice: add two whole cloves of garlic to the pumpkin and sweet potato. description
Pure comfort food with these One Pot Chicken Drumsticks with Tamarind Gravy.
preparation
-
Remove the chicken drumsticks from the package, and sprinkle the skin with plenty of salt. Take out the inside of the halved pumpkin and cut it into larger pieces. Peel the sweet potato and also cut it into bite-sized pieces. Peel and roughly chop the onion. Peel and finely chop the garlic. Mix everything together and mix vigorously with salt, pepper and paprika powder.
-
Then mix with canned tomatoes and cherry tomatoes and place in a small fireproof dish. Dry the chicken drumsticks and place them on top of the vegetables.
-
Preheat the oven to 180 degrees. Mix the remaining ingredients to make the sauce, then pour over the chicken and vegetables. Bake everything in the oven for about 45 minutes and then enjoy.
