Bean soup with cream is always a special taste experience.

Simple, yet spectacular: Delicious and hearty bean soup with cream and fine croutons brings back the best childhood memories.

Ingredients for 4 servings:

  • 500 g green beans, fresh or frozen
  • 2 onions
  • 3 tablespoons of olive oil
  • 1 1/2 l of vegetable soup
  • 2 potatoes
  • 1/2 bunch of parsley
  • 100 ml of cream
  • 1 teaspoon of vegetable salt
  • 1 pinch of black pepper, freshly ground
  • lemon juice
  • 4 tablespoons of sour cream
  • croutons

And this is how it is done:


  1. Pick and wash the beans. Cut the ends with a kitchen knife. Break or cut the pods into small pieces. Peel and finely chop the onion.
  2. Saute the onion in oil in a large pot. Add the green beans and mix briefly. Then pour in the vegetable broth.
  3. While the beans are cooking, peel the potatoes, cut them into small pieces and add them to the soup. Wash the parsley, cut it finely and also add it to the soup. Cover and let it cook for about 15 minutes.
  4. Then pour in the cream and season with salt, pepper and a little lemon juice. Remove the pot from the stove, blend the soup with a hand mixer or in a blender and gradually stir in the crème fraîche. Serve with croutons and enjoy warm.
