Asian Style Chicken Pho Soup Recipe NDR.de – Guide

Ingredients for the soup:

For a spicy pho-style soup, you need a strong broth as a base. In Vietnam, it is traditionally made from beef and beef bones. The basis of the Eat Better variant is chicken soup. It is worth preparing them in larger portions and freezing them for future use.

The soup is prepared as follows: wash the chicken inside and out, put it in a pot and cover it with cold water. Let it boil. Wash and roughly chop the vegetables and mushrooms. Dice the garlic and ginger. Add to the chicken along with the herbs and remaining spices. Add a little salt. After it boils, cook with a half-closed lid on low heat for about 1.5 hours. If necessary, remove the growing turbidity.

Then carefully remove the chicken from the pot. Separate the meat from the bones and set aside for later use. Pour the soup through a thick sieve and collect the vegetables. Pour the liquid through a clean kitchen towel. This makes the soup especially nice and clear. Season with a little salt and pepper.

Ingredients for the soup:

Clean the vegetables and onions and cut them into long strips. Remove the stalks from the shiitake mushrooms and tear the caps into pieces. Heat the oil in a pot and sauté the onion and vegetables that take longer to cook (parsnips, carrots). Add the soup. Cut the lemongrass in half lengthwise and tap it firmly. Peel and finely chop the ginger and garlic. Also cut the chili into small cubes. Add the prepared spices with star anise, cinnamon and lime to the soup and simmer for a few minutes. Slice the pak choi. Put the thick stalks in the soup. They are cooked for about 2-3 minutes. Green leaves and snow peas are added to the soup at the very end, they just need to be soaked briefly.

Cook the rice noodles separately.

to serve:

Remove the leaves from the stem of the plant. Season the soup with fish sauce, soy sauce and a little lime juice and add some cooked chicken. At the end, add a few drops of sesame oil. Roll the noodles into sections and put them in soup bowls. Add the soup with the toppings and garnish each with a handful of herbs.

Advice:

The basic spices for the soup are lemongrass (substitute for lime juice and zest), soy sauce, fish sauce, garlic, ginger and fresh coriander. This gives the soup a typical Asian aroma. Other spices enrich the soup, but are not absolutely necessary.
